Yogurt Pancakes: Thursday's Meal!

I made 'Yogurt Pancakes' last night. The husband adored them! :) YAY!

So, here's what you need:

1 cup yogurt (I used 'Great Value' Strawberry)
7 tablespoons flour
1 tablespoons sugar

1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 tsp vanilla extract (optional)

First, take your yogurt, flour, sugar, baking soda, and salt and mix it all together in a bowl. Make sure it looks nice and smooth and that everything is stirred in before progressing.

Next, whisk your eggs in a separate bowl. Once they are whisked, add in your vanilla extract. Once that is all mixed together, dump it into the bowl with your other ingredients.

Stir that together nice and easy until you get a nice, smooth mixture.

I spooned in a good amount for E's pancakes. (The original directions say 1/4 cup, but Ethan likes large pancakes, so I made his a little bigger!) You will see your pancakes start to bubble up like this after 2 to 3 minutes:


Make sure that you keep your stove setting on like a 2 or 3. Don't go any higher because your pancakes will start bubbling up (which indicates to flip it over) and when you flip it over, the bottom half will be burned and yogurt will splatter everywhere because it wasn't cooked thoroughly... just quickly. I won't say how I learned this.


Isn't that a good looking pancake batter mixture? See the strawberries in there? Yum!

And this would be your final product. My pancake is a little odd shaped, but Ethan always says, "I don't care how they look, I just want it to taste good."


See the strawberry in that too? Ohhh yeah. That's the good stuff. Ethan adored these. I thought they needed something.... more. I can't explain it. I don't know if I would cut down the eggs next time. I'm weird and I hate having things that even remotely have the taste of egg in them and I could taste it in these. Maybe it was my own brain? haha! I'm not sure. But I would probably add more next time. Either by adding fruit to the batter or putting it on top with some sugar. I just feel like it needed 'sweetened' up. Go figure, I can turn anything remotely healthy into... not so healthy, haha :)

Ethan enjoyed them without even putting syrup on them though, so they must have been pretty good! :)

Weekly Meals, 2/6-2/10






 I am a terrible wife and mother, haha! I neglected my duty to make dinner last night... well, not so much a duty.. okay, half duty.. half thing I absolutely love to do! :) But we had such a busy day yesterday!
First, I found out I have to get my wisdom teeth cut out on February 13th. Yesssss, Happy Valentine's Day husband! I'll be a hot mess, I am sure. Hope he enjoys that! ;) After that, we had to run and sell my husband's truck, stop and pick up formula (or our heads would roll, most certainly!), stop at the Chiropractor for E's physical therapy, hit the gym so E could register for a competition there, and run to my parent's house to print off our lovely 1098s (thank you college!) Woo! Did you catch all of that? By the time we got home, it was 8pm and we all still needed baths and of course, AMERICAN IDOL was on! (Any fans??) So, as you can see.. there wasn't a lot of time for a home-made dinner. 

Hopefully next week won't be as busy!

I think tonight I am going to make the yogurt flavored pancakes, so I will fill you guys in on that tomorrow *crosses fingers*

Chicken Quesadillas: Tuesday's Meal!





Sorry, I have been behind on the whole 'Weekly Meals' thing! Monday we ended up going out to dinner with some friends of ours that are moving away. Breaks my heart when we go enjoy a meal with individuals simply because they are moving to another state :( We have some good friends starting new chapters in their lives that we are truly going to miss!

BUT last night, I made 'CHICKEN QUESADILLAS WITH MEXICAN RICE.'

I know, that's not something that's like "Oh my gosh, how in the world did you make that?" haha! But it turned out good, so I thought I would share... because it's quick and we all know how wonderful that is! 

Here's what you need to make your Chicken Quesadillas:

Tortillas
Chicken
Taco Seasoning
Shredded Cheese
Any other yummies you want to add (we had sour cream and ranch dressing)

I made 3 quesadillas since it's just the husband and me that would be eating it. I took 3 tortillas and wet one side of it. (I basically just ran my hand under cold water and rubbed it on one side.) Then I laid the damp side on to the baking pan. (Make sure you spray the pan too before all of this or they will stick!)

After that, I put a thin layer of shredded cheese on the tortilla. I used the Shredded Fiesta Blend from Great Value. It tasted amazing!

While all of this was going on, I chopped up a 1/2 pound of chicken and was cooking it on the stove. After grilling it, I added 3/4 cup of water and the taco seasoning mix I had. I used McCormick.. the HOT kind :) It's the only way to go in this house, haha! But you can use whatever you would like, obviously :)

I laid the chicken all over the thin layer of cheese on the quesadilla, then I added another layer of cheese on top of that. After you have done that, just throw a tortilla on the top of all those yummy things!

Throw it in the oven at 350 degrees for about 10 minutes. Just watch it after about 8 minutes... you don't want the tortillas to be too hard! :) Once you take it out of the oven, use a pizza cutter to cut it in pieces! 

We served ours with Mexican Rice!

This was an AWESOME meal that we will definitely have again. As I said earlier, it was SO easy to do and quick! I would definitely recommend this :) We dipped ours in sour cream and ranch dressing. YUM.
