I am proud to say that we haven't eaten out for a meal (other than once with friends) in almost 2 weeks! I have been working really hard to eat at home for breakfast, lunch, and dinner. It takes a lot more planning as far as meals go, but I feel as though we are doing really good with it-- and saving money! I have been spending about $65-$80 a week and eating EVERY meal at home! I am so happy. I didn't think we could do it-- but we did!
I am going to try and do the same thing this week too! Of course, 4th of July, we will eat out where we go to watch fireworks, but other than that, I am going to try and have us eat all meals at home again! This is tough when you are pregnant LOL sometimes stuff just does not sound good, but we manage! :)
Saturday morning, I am planning on having Cheesy Potato Breakfast Casserole. HERE is the link.
Potato Breakfast Casserole:
1 pound Johnsonville Mild Italian Sausage, cooked
1 yellow onion, chopped, sauteed in sausage grease
7 eggs
1/2 cup milk
20 ounce bag frozen Ore-Ida Diced Hash Browns
8 ounce brick of Mild Cheddar Cheese, grated
Salt & Pepper, to taste
Instructions:
Preheat oven to 350. Spray medium casserole dish (we used 9 x 13) with non-stick spray. Set aside.
Prepare sausage and onions.
In a large mixing bowl, combine all ingredients, including sausage and onions. Pour into prepared casserole dish. Reserve roughly one cup of the cheese for topping.
Bake for 35 minutes. Remove from oven and top with reserved cheese. Return to oven for 8 minutes.
Allow casserole to rest for 15-20 minutes. Serve and enjoy!
Saturday afternoon, we are having a get-together for my husband's aunt so food will be provided. Saturday evening, we are spending time with my parent's at a local event so we will eat there with them.
Sunday morning, I am planning on having leftover breakfast casserole.
Sunday afternoon, we are going to have BREAKFAST again, haha! My husband loves it, so I figured why not! You might be shocked to know, but I have never made an omelette! So this should be interesting!
We are going to have omelettes with sausage, green pepper, onion, mushrooms, red potatoes, and cheese

Monday dinner will be BBQ Chicken, Mashed Potatoes, and Corn. I am just going to throw chicken breasts in a crock pot with BBQ Sauce and let it cook on low 4-6 hours. I'm making my own mashed potatoes and having corn on the cob.
Tuesday dinner will be a stir fry dinner. I make my grandpa's recipe. Some say it's not stir-fry but it's our own version. I melt butter in a pan and cook cut up chicken breasts. After cooking that, I cut up 3 green peppers and one onion and saute those in butter. I add them to the chicken, season with garlic, salt, and pepper, and we serve it over a hot plate of white rice.
Wednesday dinner will be Veggie Nachos. Ethan has been talking about wanting these for so long. They're simple. I just buy a bag of tortilla chips and we put shredded cheese on them, onions, black beans, corn, onion, green pepper, and hot sauce. (I put tomatos too but hubby doesn't like those!)

1 cup milk or cream
salt & pepper
assorted vegetables**

Preheat oven to 350 degrees. Place crust in pie plate. Whisk eggs until well blended. Add milk & whisk again. Add salt & pepper to taste (I use approximately a half-teaspoon of salt and a quarter teaspoon of pepper.) Layer vegetables in over crust in pie plate. Top with generous layer of shredded cheese. Pour egg mixture over cheese, then trim or fold over crust edges as desired. Bake for approximately 30-40 minutes until set in center. If cheese is browning too quickly, cover with foil. Let stand for 10-15 minutes before serving.
