Recipes for Upcoming Meals-- Enjoy!


I am proud to say that we haven't eaten out for a meal (other than once with friends) in almost 2 weeks! I have been working really hard to eat at home for breakfast, lunch, and dinner. It takes a lot more planning as far as meals go, but I feel as though we are doing really good with it-- and saving money! I have been spending about $65-$80 a week and eating EVERY meal at home! I am so happy. I didn't think we could do it-- but we did!

I am going to try and do the same thing this week too! Of course, 4th of July, we will eat out where we go to watch fireworks, but other than that, I am going to try and have us eat all meals at home again! This is tough when you are pregnant LOL sometimes stuff just does not sound good, but we manage! :)

Saturday morning, I am planning on having Cheesy Potato Breakfast Casserole. HERE is the link.

Potato Breakfast Casserole:

    1 pound Johnsonville Mild Italian Sausage, cooked
    1 yellow onion, chopped, sauteed in sausage grease
    7 eggs
    1/2 cup milk
    20 ounce bag frozen Ore-Ida Diced Hash Browns
    8 ounce brick of Mild Cheddar Cheese, grated
    Salt & Pepper, to taste

Instructions:

    Preheat oven to 350.  Spray medium casserole dish (we used 9 x 13) with non-stick spray.  Set aside.
    Prepare sausage and onions.
    In a large mixing bowl, combine all ingredients, including sausage and onions.  Pour into prepared casserole dish.  Reserve roughly one cup of the cheese for topping.
    Bake for 35 minutes.  Remove from oven and top with reserved cheese.  Return to oven for 8 minutes.
    Allow casserole to rest for 15-20 minutes.  Serve and enjoy!

Saturday afternoon, we are having a get-together for my husband's aunt so food will be provided. Saturday evening, we are spending time with my parent's at a local event so we will eat there with them.

Sunday morning, I am planning on having leftover breakfast casserole.

Sunday afternoon, we are going to have BREAKFAST again, haha! My husband loves it, so I figured why not! You might be shocked to know, but I have never made an omelette! So this should be interesting!

We are going to have omelettes with sausage, green pepper, onion, mushrooms, red potatoes, and cheese

Monday dinner will be BBQ Chicken, Mashed Potatoes, and Corn. I am just going to throw chicken breasts in a crock pot with BBQ Sauce and let it cook on low 4-6 hours. I'm making my own mashed potatoes and having corn on the cob.

Tuesday dinner will be a stir fry dinner. I make my grandpa's recipe. Some say it's not stir-fry but it's our own version. I melt butter in a pan and cook cut up chicken breasts. After cooking that, I cut up 3 green peppers and one onion and saute those in butter. I add them to the chicken, season with garlic, salt, and pepper, and we serve it over a hot plate of white rice.

Wednesday dinner will be Veggie Nachos. Ethan has been talking about wanting these for so long. They're simple. I just buy a bag of tortilla chips and we put shredded cheese on them, onions, black beans, corn, onion, green pepper, and hot sauce. (I put tomatos too but hubby doesn't like those!)

Thursday dinner will be fried rice with chicken breasts and veggies and yum yum sauce. I found a great fried rice recipe HERE.

I am going to chop up chicken and cook with soy sauce. I am going to cut up a zucchini as well as cook it with the chicken.

I am buying yum yum sauce at the store as opposed to making my own.

Friday brunch (before we go to the 4th of July celebration) will be Vegetarian Quiche. I found a great recipe HERE.

1 pie crust
4 eggs
1 cup milk or cream
salt & pepper
assorted vegetables**
shredded cheese

Preheat oven to 350 degrees.  Place crust in pie plate.  Whisk eggs until well blended.  Add milk & whisk again.  Add salt & pepper to taste (I use approximately a half-teaspoon of salt and a quarter teaspoon of pepper.)  Layer vegetables in over crust in pie plate.  Top with generous layer of shredded cheese.  Pour egg mixture over cheese, then trim or fold over crust edges as desired.  Bake for approximately 30-40 minutes until set in center.  If cheese is browning too quickly, cover with foil.  Let stand for 10-15 minutes before serving.

We are going to have spinach, mushrooms, onion, and green pepper in our quiche.

After doing my calculations and adding in what I'm buying for the girl's lunches, toiletries, etc.... it's a grand total of:

$79.57 :) (No coupons used.)

H-Week Activities (June 30th-July 4th)


H- Week

We will do activities relating to the letter H from Monday, June 30th- Friday, July 4th.

Monday, June 30th- HAND-make a gift for someone special in our life!

Tuesday, July 1st- HELP Mommy clean. I'm hoping to get them sweeping the floors, or something fun like that!

Wednesday, July 2nd- Trace/Draw the letter 'H' and either put it on the fridge or draw it on our chalkboard wall :)

Thursday, July 3rd- H is for the HOKEY-POKEY! We are going to sing and dance to this song! I hope the girls enjoy it!

Friday, July 4th- HAPPY JULY 4TH! We are going to celebrate our freedom and independence!

Recap of F-Week!



Monday, June 16th- FRUIT LOOP BARS. We are going to make Fruit Loop Bars for a snack today. Recipe is HERE.


Tuesday, June 17th- Draw/Trace the letter 'F' and hang it on the fridge.
 

 We did it on our chalkboard wall today. Mommy's 'Fs' are on the top and Tayler's are on the bottom
Wednesday, June 18th- Make FISHY faces. We will discuss how FISH starts with the letter F and we will have a blast learning how to make a FISHY face!

Today's task Wednesday, June 18th was suppose to be 'make fishy faces' but the girls weren't interested at all! So, instead, we made 'fish' themed cards for Daddy for 'Letter F Week!' Tayler's says 'You OFISHAlly stole my heart' and she drew a pretty picture for Daddy.. And Quinn's says 'Fishing you a great night' and she also drew a pretty picture with a little help from Mommy! They love coloring and daddy loved it too!!!




Thursday, June 19th- FRENCH TOAST. We are going to make FRENCH toast for breakfast and we are going to discuss how FRENCH TOAST starts with the letter 'F.' This should be a tasty treat for the girls and we should have a lot of fun making it together!
 
 


Friday, June 20th- We are going to go FISHING!

It has been consistently raining since we decided to do this activity, so we are taking a rain check.. LITERALLY LOL :)

22 Weeks Pregnant


We are 22 weeks pregnant as of today, 6/25/2014 :)


'Baby Bump' App says that baby is about 11" long (size of a spaghetti squash) and is weighing in at a whole pound! I believe it. He's moving around like crazy anymore-- I can't get over how well you can see him moving on the outside. This stuff didn't happen with Tayler until like 25-26 weeks and Quinn about 23-24 weeks and it's been happening with Lucas for a few weeks now :) I love it! 

I've had REALLY bad sciatic pain this week. I didn't have this really at all with either of my girls.. I'm not sure if he's sitting different than them or what, but I have been in so much pain I can't get comfortable sometimes :( Usually a warm bath helps, thankfully! I'm not really one of those people that likes taking medicine (even when I'm not pregnant) so I usually use that as a last resort.

I've also had TERRIBLE heartburn this past week. Of course, I made the mistake of having pizza Friday evening (I've only had pizza one other time during this pregnancy and I had heartburn for almost 2 whole days after--- should have learned my lesson then! LOL) But it just sounded so darn good :) All I'm saying is Lucas better have a head full of hair, right? haha!
We have about 15-18 weeks left of this pregnancy.. Breaking that down in to days scares me a bit! LOL That's only 105-126 days... EEP! 

As of Sunday 6/29, we have exactly 4 months til our due date! The countdown is certainly on!

Now, for our weekly questions:
How far along? 22 weeks.
Total Weight Gain? 3 so far :) I have a doctor's appointment today, so I'll know exactly how much today.
Maternity Clothes? Just LOTS AND LOTS of maxi dresses!!
Stretch Marks? I have some from both pregnancies already!
Sleep:  I've had a tough week sleeping again. I've had a headache like 3 times this week and that always affects my sleep. I think it's the rainy weather :/
Best Moment of This Week: Feeling the baby, of course! Ethan got to feel him too! And I felt him have hiccups for the first time :)
Miss Anything? I needed a stiff drink this week LOL!!! :)
Movement: Yes!
Food Cravings: Salad at Adornettos with italian dressing. I STILL haven't got it! LOL
Anything Make You Queasy or Sick? Dirty diapers :(
Gender: BOY!!
Labor Signs: I'd sure hope not! :)
Symptoms: Peeing constantly, feeling movement, back pain :)
Belly Button In or Out? She's an innie!
Wedding rings on or off? On and sometimes off at night! My hands seem to swell then for some reason?
Happy or Moody this Week?  I've been pretty happy this week!
Looking Forward To: We have a doctor's appointment today-- I'm excited to hear baby boy's heartbeat!

Cheers to 22 weeks.. on to 23 weeks!!
